An Oriental Delhi Tale…
The Delhi Delicious Factory in Lenasia has been our home since 1991 and has
been at the centre of the community ever since. In that time, we've found a way
of doing things that has won the hearts of thousands of pie-eaters. That’s why
we stick to what we’re good at, with our secret recipes and cooking methods,
our prime cuts of meat and our specially-blended pastry.
We currently employ around 300 people,
from our expert cookhouse monitors, who make sure our meat is cooked to just
the right level of tenderness, to delivery drivers who ensure our pies get to our
stores in time for your morning cup of tea!
We make over 100 000 pies a week and all are watched over every
step of the way, to make sure they always look and taste as good as you’ve come
First, our in-house butchers prepare the meat for our pies, making sure the
best cuts are used and most of the fat is removed. Next, the meat is taken
through to ‘Kulsums Kitchen’ – the cookhouse . This is where our
open-top pans give off the constant enticing smell of home cooking, as the meat
is gently simmered in its’ own juices to create the rich, Delhi Delicious
At the same time, our expert pastry makers are busy mixing and rolling our
unique pastry to just the right thickness, making sure it is thick enough to
contain all that meat and juice, but doesn’t end up too chewy!
Then comes the filling. Each pastry case is filled with just the right amount
of chunky peppered steak , gooey cheese and salami or traditional chicken curry , to
give you the perfect bite. We have six production lines at the factory, producing our traditional homemade pies,
our signature pure butter puff- pastry
cocktail pies, oriental samoosas ,
chilli bites and frikkadels. The latest
line is for our all new gourmet pizzaz.
After the production
process , the products are sent into our giant cold-rooms to chill.Next, the products are divided
between our different stores. The products are put straight onto vans for our
This means, when you tuck into your next traditionally, oriental snack, it was probably
produced just a day or two before,
especially for you!
We are very particular about who supplies the essential ingredients
for our pies. That’s why you may be surprised at just what it takes to make the
We work hard to make sure that all our ingredients are
sourced solely from suppliers who meet our strict quality criteria.
We use a quality
prime cut of dicing beef that contains just 5% fat. By slow cooking the meat in
a traditional way we produce rich gravy. This means that, depending on the
recipe, we either don’t need to use stocks or bouillons at all, or their use is
restricted. This is also why we’ve been able to remove the flavour enhancer MSG
from our products.
We also use fresh,
local farmed vegetables, wherever possible. Our target for 2012 is to review
the sourcing of our ingredients and buy from local suppliers, wherever we can.
A good example is our
‘Lekker’ pepper steak pie, with beef sourced entirely from Karan Beef, an
award-winning Proudly SA Company.
